A menu that changes when the market does

Beetroot, red cabbage, celeriac and sweet potatoes in wooden crates, the kind of market produce that decides Salt & Ember's Wednesday menu

There are nine things on it and at least three of them will be different next week. We write it on Wednesday morning, once the boats have called and the deliveries are in, not the month before.

It means we cannot tell you in advance what you will eat. It also means nothing on the plate has been sitting in a fridge waiting for a menu to be reprinted.
