Where the wood comes from

Ash and beech, from a yard eleven miles away, seasoned eighteen months. We buy it a year ahead because wood that has not dried gives you smoke instead of heat.

It matters more than almost anything else in the kitchen. A good fire is most of the cooking and all of the timing.
