Booking, and why we open the first of the month

We have eighteen covers downstairs and no way to make more; the six seats at the counter are kept for people who did not book. Releasing six weeks at once, on the first, at nine, is the fairest thing we have found.

It is not perfect. It is better than a waiting list nobody moves up, and better than holding tables for people who might be somebody.
