Better coffee in four steps

Weigh
Sixty grams of coffee to a litre of water. For one big cup: 18 g of coffee, 300 g of water.

Grind
Medium, like table salt. Grind it now, not this morning: coffee goes flat within the hour.

Bloom
Pour twice the coffee’s weight in water, wait forty seconds, and watch it swell.

Pour
Add the rest in two goes, keeping the bed level. The whole brew should take about three minutes.

The roastery
A twelve-kilo drum and a lot of note-taking
We started in 2019 with a second-hand roaster in a railway arch, selling to three cafes. The arch is still there. The notebooks now fill a shelf, and every bag carries the date its coffee came out of the drum.
