You set a number, the number holds, and the thing in the pan does what the number tells it. That is genuinely useful, and for a sauce it is what you want.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Wood is not a straight line. The fire is hottest twenty minutes after it has stopped looking dramatic, and the cook has to read it rather than set it. A rib of beef put over embers at the wrong moment is a rib of beef you have wasted.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">What you get in exchange is a surface. Fat rendering onto coals comes back as smoke, and the smoke goes into the crust rather than past it. There is no setting on a gas range that does that, which is why the grill has never left the room.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It also means the menu moves. When the fire is at its best we cook the things that deserve it, and when it is settling we cook the things that want gentler heat. The board changes twice a service and nobody minds.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Gas is easier, cleaner and more forgiving.
